IDEO Product Design Deep Dive—This is a classic product design video. It is somewhat older, being created circa 1999, but it portrays the product design process well at one of the premier product design firms in the world, IDEO.

Guy Kawasaki on Innovation—This TEDx video, produced at UC Berkeley, is an excellent presentation of innovation principles delivered by the former Marketing Manager of the Apple Macintosh, Guy Kawasaki. He presents a number of great innovation principles and excellent examples as well.

Why People Don't Work at Work—This is one of my favorite TEDx videos. It is by Jason Fried, and he explains why people don't get work done at work—they get work done other places. And he tells why—it's the M&Ms!

The Strida 3 Folding Bike Design—This is also a rather older video, circa 2006. However, it is also an excellent product design process video of how the original Strida folding bicycle was designed by one person. It has some excellent product design principles visualized in the process that is presented.
